Made with all the ingredients that make oatmeal the country’s favorite eggless breakfast,

this muffin is a cinch to make and please.

This muffin is great warm or cold served alone, buttered or with a fruited cream cheese. A perfect quick breakfast or as an evening treat.  With just the right sweetness, this muffin with the addition of a dollop of the fruited cream cheese, late night “hungrys” are banished  by something worth eating.

Our favorite Fruited Cream Cheese is a 50/50 mixture of Apricot/Mango/Orange fruit spread  stirred together with softened cream cheese then chilled. (Great on a bagel, too.)

Ingredients

Stir together dry ingredients:

  • 1/2 cup all purpose flour
  • 1/2 cup almond flour
  • 1 cup old fashioned oatmeal
  • 1/4 tsp. baking soda
  • 2 tsp. fresh double acting baking powder
  • 1/2 tsp. kosher salt
  • 1/2 tsp. each freshly ground ginger, nutmeg and cloves
  • 1 tsp. top quality cinnamon
  • 1/2 cup dried cranberries (or raisins, if you prefer)
  • 3/4 cup walnuts (med. chop)

Combine wet ingredients in a large (2 cup)  measuring cup

  • 1 egg, slightly beaten
  • 1/3 cup apple sauce
  • 1/4 cup organic local honey (any flavor)
  • 2 Tbsp. dark brown sugar (sub. light brown + 1 tsp. molasses)
  • 2 Tbsp. coconut oil (sub. melted butter or olive oil)
  • 1/2 cup + 2 Tbsp. low fat buttermilk

Process

  1. Measure dry ingredients into a large mixing bowl
  2. Stir with a whisk to combine all dry ingredients well and to distribute nuts and fruits.
  3. Make a well in center of dry ingredients
  4. Measure and mix wet ingredients together in 2 cup measure to combine
  5. Pour into well of dry ingredients and mix well.
  6. Stir at least 5o strokes
  7. Drop into muffin cups  (1/3 cup) each
  8. Bake in preheated 350° F oven for 35-40 minutes until tester comes out clean when pierced in center.
  9. Cool on a baking rack.  Serve warm or cold.
