‘Anything with Beans’ Burrito

This is a quick lunch that fills the empty spaces with

a satisfying heartiness to keep thoughts on what needs to be done during the second half of the day.  It is a great way to use those leftover baked beans from the barbecue, adding in the sliced up leftover hotdogs, some sliced green onion, a little diced sweet peppers and you’ve got my favorite filling!  Of course, this recipe works with any other kind of leftover beans; chili, refried, black or white, whole or mashed!  Add grated cheese or leave it out.  Just put the filling together, measure onto tortillas, roll up and preheat 25 seconds in the microwave.  Out of the microwave, spray with non-stick spray ( I use the canola spray) and crisp on a flat hot griddle or in a heavy frying pan.  Serve with your favorite salsa; I prefer salsa verde.  Include a dollop of sour cream, of course.  Enjoy!

Ingredients

  • 4 Large flour tortilla
  • 1 c. any left over with beans ( my favorite is baked beans with sliced winers)
  • 1/4 c.  diced green onions
  • 1/2 c. diced sweet peppers
  • 1/2 c. grated cheese (any kind)*
  •  canola non-stick spray

Process

  1. Spoon 1/4 c. filing into center of flour tortilla
  2. Fold right/left sides evenly toward the center
  3. Roll (from end nearest you) to form a roll up sandwich
  4. Spray on all sides with non-stick spray
  5. Place on hot flat griddle (or in a hot cast iron skillet), rolling to brown all sides
  6. Turn off heat, cover and allow to rest for at least 3 minutes
  7. Cut in half (on the diagonal) and serve with salsa verde and a dollop of sour cream
