Energy Lunch Salad for One

  • 2 c. dark green salad mix (chard, spinach, kale, arugula)
  • 4 baby tomatoes (cherry, grape, etc.)
  • 1/2 c. cucumber cut in 1/2″ chunks
  • 4 radishes, cut in 1/4″ chunks
  • 2 tbsp. pinenuts, sunflower or toasted squash seeds
  • chive flowers, if available: torn from stem

Dressing:

  • Juice and zest of 1 lemon
  • 1/2 tsp. Salad Salt (recipe follows)
  • 1 tsp. extra virgin olive oil

Whisk or shake together with lemon until salt dissolves, then slowly add evoo. Dress salad and enjoy.

Salad Salt           Yield:  1 cup

  • 1/2 c. Kosher salt (fine grind)
  • 2 tbsp, garlic powder
  • 3 tbsp. fine grind fresh black pepper
  • 2 tbsp. smoked paprika
  • 1 tbsp. finely groung dried parsley

Mix together and store air tight for up to 2 months.

    This is a great “take to work salad” (undressed, of course) as it holds perfectly for hours. Just take the dressing in a little container to shake and pour. Eat this salad for lunch and prepare to get busy. It is truly an energy lunch!
