Teriyaki Chicken Vegetables and Dumplings

Teriyaki Sauce

  • 1/4 cup soy sauce

    Chicken Teriyaki Stir Fry

  • 1 cup water
  • 1/2 tsp sesame oil
  • 1 tsp. fresh grated  ginger
  • 1 large clove garlic, peeled , smashed and diced
  • 5 tablespoons packed brown sugar
  • 1 -2 tablespoon honey
  • 2 tablespoons cornstarchpotstickers
  • 1/4 cup cold water
  • 1/2 cup chicken (or vegetable) stock
  1. Mix all but cornstarch and 1/4 c. water in a sauce pan and begin heating
  2. Mix cornstarch and cold water in a cup and stir to combine
  3. Add (a little at a time) to sauce in pan and heat until sauce thickens as desired 
  4. (Add additional stock to thin if sauce becomes too thick.)
  5. Reserve 1/4 cup teriyaki sauce
  6. Set remainder of sauce aside and make the stir fry

Chicken Vegetable Dumpling Stir Fry

  • 2 c. cooked chicken (both white and dark meat preferred) bones and skin removed
  • 2 large carrots, peeled and sliced thinly on the diagonal
  • 2 large  celery ribs, sliced thinly on the diagonal
  • 1 large yellow onion, roughly chopped (medium chunks)
  • 6 oz. petite green beans (haricot vert)
  • 2 cups bok choy, chopped
  • 2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • pinch red pepper flakes (to personal heat taste)
  1. Heat peanut oil over hot heat until very hot
  2. Add carrots, celery and onion and stir fry vegetables to crisp tender.
  3. Add chicken and continue to stir together for about two minutes
  4. Add greens and seasonings and continue to stirfry until beans are tender and bok chok is wilted
  5. Add teriyaki sauce, toss and cover to keep warm
  • 1 cup chicken broth
  • 8 frozen dumplings, thawed (homemade okay)
  1. Heat chicken broth to boiling
  2. Brush dumplings with oil
  3. Add dumplings and cook uncovered until broth evaporates and dumplings brown slightly, turning once during process to brown both sides.
  4. Serve with stir fry, reserved teriyaki on the side

Wine suggestion:  Good with Riesling, Ice Wine, Gewürztraminer
