Basic chicken salad with the addition of grated queso fresco cheese and diced pickled jalapeño pepper rolled in corn tortillas and covered with a light salsa crema topped with Colby-Monterey jack cheeses (or your favorite), and heated in the oven until bubbly. Serve with black beans and pico de gallo salsa

A quick, easy dinner with a Mexican flair is achieved in this dish.  Starting with the basic chicken salad, freshly made, deli bought, or thawed from your frozen prep-ahead ingredients  (add the mayonnaise) then the queso fresco and chopped jalapeño and in one quick stir you’re on your way to dinner in 25 minutes.

The ingredients for this recipe are supermarket/pantry staples and set you up for a delicious dinner that is not only everyday-available but a deliciously quick company dinner as well.                                   Serve 4                                                 Easy to double!

Ingredients:

  • 5 c. chicken salad (or a large container from your favorite deli)
  • 8 oz. shredded queso fresco

  • 1 tbs. diced pickled Jalapeño  peppers
  • 1 tbs. diced fresh Jalapeño  peppers
  • 1/4 c. olive oil (or other oil of your choice)
  • 8 -8″ Corn Tortillas
  1. Lay tortillas out on a baking sheet and brush both sides with oil
  2. Place 3/4 c. filling down the middle of each  tortilla and roll over filling
  3. Place, seam side down, in a deep sided casserole dish.
  4. Cover with Salsa Crema (recipe follows)

Salsa Crema

  • 1/2 c. heavy cream
  • 1 c. green salsa
  • 1/2 sour cream
  • 1 tbs. diced pickled Jalapeño peppers

For topping

  • 8 0z. shredded Colby-Jack Cheese
  • 3 tbs. chopped cilantro

.  Wine: Riesling (Columbia Crest Reserve, WA, Chenin Blanc – Beringer, CA) for everyday or step up the wine quality to one of either of these vintner’s Winemaker’s Reserves of their Rieslings or a Chenin Blanc.
