Oven Grilled Salmon w/Bay Shrimp Au Jus

This Salmon in Shrimp Au Jus is a special meal for a special dinner and it is healthy, low in fat and in perfect balance for diabetic diets .  Wild caught fish and sweet fresh bay shrimp are truly a bonus here because it is a meal that can come from lesser ingredients and still be spectacular.  I’ve been known to serve this shrimp sauce over canned salmon patties and receive rave reviews. So let your imagination and skills rule in getting this delicious meal on the table.

Grilled Salmon w/Bay Shrimp Au Jus
  • 3-lb. Salmon Fillet cut in 6 serving sized portions
  • 1/2 lb. Bay Shrimp
  • 2 tbsp. melted butter
  • 1 tbsp. extra-virgin olive oil
  • 1/2 tsp. each  celery salt, freshly ground black pepper
  • 1 tbsp. Best Foods® mayonnaise
  1. Preheat oven to 350°F and begin preheating a large cast iron skillet that has been brushed with melted butter + olive oil.
  2. Rinse in cold water and dry salmon well with paper towels
  3. Brush both sides of fish with melted butter + olive oil
  4. Season both sides with celery salt and  pepper
  5. Place in the preheated cast iron skillet (skin side down) and into the preheated oven
  6. Bake for 12 minutes for medium well (or less, depending on your preference for doneness.

While Salmon cooks, melt butter in a small saucepan and make a pan sauce or Au Jus :

  •  2 tablespoons of unsalted butter
  • 1/8 tsp. cayenne pepper
  • 1/4 tsp. sea salt
  • 1 small clove garlic, smashed and chopped
  • 1/3 cup chicken stock, (vegetable stock)
  • 2 tbsp. diced scallions
  • 2 tbsp. diced celery (include a few celery leaves)
  • 1/3 good dry white wine (Pinot Grigio/ Chenin Blanc/Sauvignon Blanc)
  1. Stir the above ingredients together and cook over high heat for several minutes until au jus begins to reduce and thicken.  Stir well at this stage.
  2. Continue cooking over medium-heat until sauce has reduced by half and thickened.
  3. Remove from heat and add shrimp. If shrimp is cooked, a most likely scenario, heat only a minute, stirring  gently to combine.
  4. Remove salmon from the oven and brush with mayonnaise
  5. Serve shrimp au jus spooned over and alongside salmon.

Roasted Asparagus and a Dilled Cucumber Cole Slaw completes the meal.
